Putanesca - Whore's Spaghetti

When I heard the name of this dish, I was enthralled!! Once I heard how it was made, I knew it was the perfect Goddess Soul Food and asked Bleu to send me the recipe. Invite the Grrls, get a glass of wine, and enjoy!

The origin of this dish and it's name seem buried in a somewhat dim and murky past; some say it was invented by one particular working girl and another story is that it was the favourite recipe of the girls themselves.. Yet another version is that the name is only descriptive - it's a rough and ready concoction.

Puta Nesca 
 
8-12 cloves garlic (finely chopped)
1 cup butter 
8tbs olive oil 
4tbs capers 
4tbs chopped fresh parsley 
5-10 fresh whole hot chili peppers  
2 cans anchovies in olive oil (no capers) 
 
4 8oz cans whole black olives (chop them up) 
28 oz whole tomatoes (drain and squish) 
1/2 - 1 cup burgandy  
 
Melt oil and butter (low). Add garlic (don't burn). Chop everything NOT red (except the chili peppers) and add to saucepan and cook for about 5 minutes. Next add all red and the peppers. Cook for 30 minutes  before serving (minimum, htis can cook all day long). Take out chilis before serving. 30min 4-6
